Parliament Square Coffee opens new flagship site in business district

PARLIAMENT SQUARE COFFEE has opened the doors to its new flagship site on Cook Street, marking the next chapter for the rapidly growing coffee and brunch brand.

The 3,500 sq ft venue, located just behind The Ivy, promises to together exceptional coffee, a British-inspired brunch menu and a new in-house bakery offering under one roof.

Parliament Square Coffee first launched on Parliament Street in June 2023 and quickly built a community of coffee lovers across the North West. The brand expanded again in 2024 with a second site on Clarence Street, which also became home to the Parliament Square Academy, an educational facility for aspiring baristas.

A major new addition to the brand is the launch of an in-house bakery, led by city baker Jess Garland, formerly of Bakesale, who joins the team as Head Baker. The development marks an important milestone for Parliament Square Coffee as it brings its baked goods production fully in-house for the first time.

Jess will oversee a daily selection of freshly baked cakes, pastries and seasonal sandwiches, which will be available not only at the new Cook Street flagship but across all three Parliament Square Coffee locations in Liverpool.

Hayley Commerford, Director of Parliament Square Coffee, said: “Opening our Cook Street flagship is a huge moment for us. This space brings together everything we’ve been working towards – exceptional coffee, great food and now our own in-house bakery led by Jess.

“Being able to bake our own cakes, pastries and sandwiches really feels like the final piece of the puzzle. It means we can ensure everything we serve is of the same quality and care that people expect from our coffee.”

The Cook Street site will also feature a dedicated takeaway coffee bar, designed for the busy business district crowd looking to grab speciality coffee alongside fresh bakes and sandwiches on the go.

Alongside the existing brunch menu, the team, led by new recruit Jon Baldwin, Head of Operations, will introduce a selection of classic British sandwiches, served from midday onwards and designed to complement the brand’s growing food offering.

Jon joins Parliament Square Coffee with 20 years’ experience in hospitality including Bold Street Coffee’s earliest days to more recently, Buyers Club and R&H Fine Wines.

He said: “I’m delighted to have joined Parliament Square Coffee at such an important moment for the brand. What Chris and Hayley have built in a relatively short space of time is impressive, and there’s a real passion for quality, hospitality and community at the heart of it.

“My focus is on supporting the team as we continue to grow, ensuring we maintain the standards people already love while building the foundations for the next phase of the brand’s development. The Cook Street flagship is a brilliant representation of where Parliament Square Coffee is heading, and I’m proud to be part of that journey.”

Designed with Liverpool’s professional community in mind, the new flagship will also include a serviced meeting room for up to 12 guests, providing a convenient space for corporate meetings and private bookings.

As with the brand’s other locations, the Cook Street site will operate on a walk-in only basis.

Opening hours for the new flagship are 7am-7pm Monday to Friday, and 8am-7pm on Saturdays and Sundays.
