Wahaca Restaurant Confirms Liverpool Opening

  WAHACA Liverpool will open its doors at 24 College Lane, L1 3DS on 20th November, bringing its award winning style of Mexican market eating to Merseyside. The Wahaca menu will offer a selection of street food dishes, such as the signature Pork Pibil Tacos ( and dishes new for winter, including Chicken wings tossed in burnt habanero salsa ; Chilli chorizo fundido, with sautéed onions and peppers smothered in melted cheese with a Mexican style chorizo oil ; and Huitlacoche empanadas, crispy pastry parcels stuffed with mushrooms, truffley Mexican corn & melted cheese – perfect for sharing. Also available on the menu will be Bigger Plates to enjoy all to oneself, such as MSC Fish Tacos, three Baja beach-shack style tacos with panko crumbed MSC cod, shredded slaw, chipotle mayo & pickled cucumber; Pasilla chicken enchilada suizas, poached chicken in corn tortillas, steeped in a gently smoky Pasilla de Oaxaca & crème fraiche tomato sauce; or a British Bavette Steak, the Mexican way, marinated in a pasilla rub, served with green rice & smoky meco salsa. Since opening in 2007, Wahaca has flown the flag for proper tequila, that is, the double distilled, 100% blue agave sort that earned the name ‘elixir of the gods’ in Central America. Along with its smokier, peaty cousin mezcal, varieties of the spirit will be a mainstay on the drinks menu. Wahaca’s cocktails blend the best tequila with favourite Mexican flavours such as the Passion fruit or Tamarind Margarita as well as some British classics shaken up the Mexican way like the Hibiscus gin & tonic or the Wahaca Mule. Also available will be wines by the glass and Mexican beers by Corona, Pacifico and Modelo . For Wahaca, sustainability is of the utmost importance and all ingredients are sourced as locally as possible, or transported with care for the environment. Where specialist ingredients have to be delivered from Mexico, the approach is to buy direct from local co-operatives that support local farming communities. The 160-cover restaurant features a rooftop terraced bar, a unique space in Liverpool’s city centre, perfect for unwinding with a beer post work or pre dinner cocktail. Excitingly, the interior will showcase specially commissioned art from Oaxacan street artist collective Lapiztola. Lapiztola’s work grew from an indignation over the political revolution in their home town and was developed to express this visually in protest. At Wahaca Liverpool, Lapiztola’s murals will draw on themes of Mexican identity, with iconography including corn, a mythical symbol in Mexico, as well as mezcal from their home state of Oaxaca. Since the inaugural Covent Garden site, Wahaca has won numerous awards for quality, sustainability and design; including the SRA’s Sustainable Restaurant Group of the Year 2012 and 2013 as well as the Sustainable Innovation award in 2015, Best Pop-up from the Restaurant Bar and Design Awards 2013, the Observer Food Monthly Award for Best Cheap Eat in the UK, The Catey’s 2015 Sustainable Business Award and the title of one of the ‘UK’s coolest brands’.
